Raspberry Yogurt Barks

  • 3 cup Organic greek yogurt
  • 1 cup fresh/frozen raspberries, finely chopped
  • ½ cup shaved almonds
  • 2 tbsp honey (optional)
  1. In a large bowl, mix the yogurt and honey until combined, add in half the raspberries.
  2. Line a baking tray with cling film or parchment paper.
  3. Pour the yogurt mixture evenly over the baking tray, levelling up with a spatula/spoon.
  4. Sprinkle shaved almonds and the remaining raspberries over the top of the mixture.
  5. Cover the mixture with cling film and put in the freezer for at least 4 hours.
  6. Break into large pieces and serve immediately ( careful, they melt very fast).
  7. Store in the freezer, well covered, for up to 1 month.
