Räksmörgås: Swedish Prawn Sandwich

  • 2 boiled free-range eggs
  • 2 slices brown or normal rye bread ( or any other good-quality bread)
  • 4 tbsp mayonnaise
  • 4-6 lettuce leaves
  • 300g / 9oz cooked prawns/shrimps, unveined and peeled
  • juice of 1 lemon + slices for garnish
  • 4 small sprigs of dill
  • 8 slices cucumber
  1. Slice the eggs and cucumber into thin slices.
  2. Spread 1 tbsp of mayonnaise over each slice of bread.
  3. Season the prawns with salt, pepper and lemon juice.
  4. Arrange lettuce on top, followed by cucumber,eggs and seasoned prawns.
  5. Top with extra mayonnaise, garnish with dill and lemon slices, and serve.
