The Perfect Stir-fry

  • 200gr/8oz beef/chicken/pork fillet, cut into strips
  • 1 medium-large carrot, cut into strips
  • 2 cups/200gr small broccoli florets
  • 3 spring onions, sliced
  • 1 red chili pepper, seeded and sliced
  • 1 tbsp chopped cashew nuts (optional)
  • ½ tbsp freshly grated ginger
  • 1 tsp minced garlic
  • ½ tsbp sesame oil
  • 1 tbsp peanut oil
For the meat marinade:
  • 1 tbsp light soy sauce
  • 1 tbsp water
  • Sea salt flakes and freshly ground green pepper
  1. Place the meat into a plastic container, add 1 tbsp of soy sauce, 1 tbsp of water. Season with salt & pepper to taste. Cover and store in a cool place.
Make sure you have all ingredients at hand before you start.
  1. Heat 1 tbsp. peanut oil in a non-stick skillet until hot.
  2. Add the meat in a single layer and cook without until browned.
  3. Flip each piece and brown the cook for another minute.
  4. Take the meat out of the pan and store in a warm place.
  5. Add ½ tbsp. sesame oil to the pan.
  6. Add the broccoli florets and stir-fry, keeping the food moving constantly, until tender.
  7. Move them alongside the pan, forming a crown.
  8. Fold carrot sticks into the center and stir-fry for a min.
  9. Add cashew nuts, garlic and ginger, and stir-fry for 30 seconds
  10. Reduce the heat to medium and fold the meat back in.
  11. Pour in 1 tbsp of water and a splash of soy sauce and cook over high heat for 30 seconds.
  12. Mix in spring onions and chili pepper, then remove from the heat.
  13. Serve with your favorite steamed rice.
