This vibrant vegan Quinoa Summer Salad is loaded with veggies and healthy beans, high in protein and naturally gluten-free. The perfect meal to enjoy on sunny days!

  • 3 cups cooked quinoa
  • 1 large cucumber
  • 10-12 cherry tomatoes
  • 1 large red onion
  • 1 can chickpeas
  • ½ can black beans
  • ½ can white beans
  • juice of ½ lemon
  • handful of fresh basil leaves, chopped
  • handful of fresh baby spinach leaves, chopped
  • 1 tbsp extra-virgin olive oil
  • sea salt and black pepper to taste
  1. Finely chop the cucumber, onion and tomatoes and place together with the cooked quinoa into a large salad bowl.
  2. Place chickpeas, black beans and white beans in a colander, and rinse under fresh running water. Drain well and add them into the salad bowl.
  3. Add in lemon juice, basil and spinach leaves, and season with olive oil, salt & pepper to taste. Mix all the ingredients until combined.
  4. Serve immediately, or cover with cling film and refrigerate until ready to serve.
