    Beat the heat with this vegan pineapple summer smoothie - A healthy way to power yourself up at breakfast and throughout the day!

    Whether you have it for breakfast or during the day,  this pineapple summer smoothie is a quick way to get 2 of your 5-a-day all in one go. It's also a natural energy-drink that fuels you up during the day, when you just feel a little tired and need a break. Pineapple, banana and nectarine make a powerful cocktail of vitamins and nutritions that will keep your body fit, healthy and energized.

    Pineapple is the perfect buddy to beat these hot summer days. Packed with plenty of health benefits  and vitamins, it's also natural thirst quencher. This superfruit contains loads of vitamin C and antioxidants, which defend our body against free radicals that attack and damage “healthy” cells.

    Creamy, rich and sweet, bananas are one of my  favourite fruits to add in smoothies. They are a good source of both vitamins and potassium, as well as fiber. This fantastic fruit has digestive properties and is a powerful natural energy booster. Adding half banana in your summer smoothie will give an extra richness to your drink and all these great benefits to your body.

    Peaches and nectarines are in season and bursting with juicy sweet flavours right now, so why not make the best of it? Add a peach or nectarine to this summer smoothie and get extra vitamin C, antioxidants and potassium. They are also rich in fluoride and iron. Iron is needed for red blood cell formation. Fluoride is a component of bones and teeth and is essential for prevention of dental caries.

    I blend the fruits in my Vitamix, together with a splash of coconut water ( you can use normal water too) and 1 cup of ice cubes. In less than a minute, your mouthwatering summer smoothie is ready to sip!

    Keep in mind that banana, peach and pineapple are naturally sweet, so there's no need to add extra sugar. A great news if you want to keep sugar income under control.

    Ingredients

    • 250 g fresh pineapple, chopped
    • 1 nectarine, chopped
    • ½ banana
    • 5 ice cubes
    • 200 ml coconut water, or water

    Instructions

    • Mix all the ingredients in your blender ( I use a Vitamix), and blend for 1-2 mins or until smooth.
    • Pour into a glass and enjoy immediately!
