    Super Cool Watermelon Smoothie

    A simple 3-ingredient smoothie that tastes like summer in a glass! This cool watermelon smoothie is packed with superfoods and makes the most refreshing and naturally sweet smoothie ever.

    I love using watermelon in my smoothies, and it's the perfect alternative to fruity waters when I crave a sweeter drink to power up my energy.

    Watermelon contains about 92% of water and just 6% of natural sugar. It's also a very good source of vitamin C, potassium, vitamin A (in the form of carotenoids), vitamin B1, vitamin B6, and magnesium. This fantastic fruit is a great way to keep your body well hydrated during summer, whilst enjoying a delicious cool drink.

    If you have checked my smoothie collection before, you'll know that carrots make regular appearance. I add a carrot or two to almost any smoothie or juice - it's not only super healthy but also naturally very sweet, meaning you don't need to add extra sugar to your drinks!

    Carrots are famous for being the best source of antioxidant nutrient beta-carotene ( it was actually named after the carrot!), as well as having an excellent amount of vitamin A. Plus, this superfood helps support good eye-health, and can protect from cancer disease.

    Sweet, crunchy and super versatile, you can use carrots for sweet and savory recipes alike. From healthy energy-packed salads and smoothies, to a more indulgent carrot cake, there are tons of ways to use this awesome veggie.

    Smoothie making is absolutely no-brainer, one of the few simple tasks I'm able to do early in the morning, when my brain is still half-asleep. All I have to do is put roughly chopped watermelon, carrots and a bunch of refreshing mint leaves in my Vitamix ( any powerful blender will do the job), then pulse until creamy and smoothielicious!

    To keep it vegan and as low cal / low fat as possible opt for purified water or natural coconut water. For a creamy texture and extra nutrients, add a splash of almond, soy or hazelnut milk.

    Ingredients

    • 1 + ½ medium-large carrots, peeled and chopped
    • 1 cup cubed watermelon, ripe
    • ½ ice cold glass water, or coconut water

    Instructions

    • Add all ingredients in a Vitamix or similar powerful blender, and pulse until creamy and smooth.
    • Serve immediately
