Amaretti Cookies Italian Almond Cookies
Add almonds, sugar and lemon zest in a food processor and pulse them until ground.
Whisk egg whites until foamy, then slowly incorporate them into the almond mixture.
Add egg whites
Form small even balls and place them on a baking tray, then rest refrigerate for 1 hour.
Form cookie balls
Roll the amaretti in sugar. Bake in the oven for 15 minutes, then allow to cool completely.
