Peel and chop the potatoes into 1-inch large cubes, then boil them until just tender.
In a large bowl whisk the eggs until well combined, add in chopped parsley and season.
Add potatoes into the bowl with the eggs. Add cheese and mix all ingredients.
Pour the mixture in a skillet and cook the frittata for 10 minutes, then flip it on the other side and continue to cook for 5 minutes more, then serve.
