Place water in a bowl, add yeast and sugar, mix and let rest for 10 min, until bubbly. Pour the mixture into the mix and add olive oil.
Slowly incorporate the flour and mix for 5 min, until the dough comes together and no longer sticks to the sides of the bowl.
Transfer the dough in a lightly oiled bowl and cover with cling film. Allow it to rest for 2-3 hours or until it doubles in size.
Divide dough and form 2-3 small balls. Transfer in a lightly oiled baking sheet and cover with a damp kitchen towel. Let them rest until doubled in size.
You can now roll your pizza dough balls and form 12-inch circles, top them with your favorite toppings and bake until cooked through.
