Ingredients

  • 300 gr/ 10.5oz italian sweet shortbread dough
  • 4 tablespoon organic orange marmalade or jam
  • zest of one orange
  • For the chocolate ganache:
  • 100 g /3.5oz 70% dark chocolate chips
  • 100 ml/ 3.5fl oz fresh double cream
  • zest of one orange

Instructions

  • Preheat oven to 200C/ 400F
  • Roll pastry, between two sheets of baking paper, until large enough to line 4 5inch tart tins.
  • Fold the pastry into the tins and trim the edges. Cover, refrigerate 30 minutes.
  • Place tin on oven tray, line pastry with baking paper, fill with dried beansBake 10 minutes, remove paper and beans. Bake further 10 minutes or until pastry is browned lightly,then remove from the oven and allow to cool.
  • In the meantime prepare the chocolate ganache. Put the chocolate chips in a heatproof bowl.
  • Heat the double cream until hot but not foamy.
  • Gently pour the cream over the chocolate and mix until creamy and dense. Set aside to cool a little.
  • Spread a layer of orange marmalade over the base of each tart.
  • Pour over a spoon or two of chocolate ganache. Allow to set in the fridge for 10 mins then sprinkle with orange zest and serve.

Notes

You can also use pre-baked tart shells, just bake them in advance and store in the freezer to have them always at hand.
