Easy, quick and loaded with Asian-inspired flavour, this Air Fryer Salmon in Coconut Milk with Lentils is highly nutritious, ready in 20 minutes and is naturally dairy-free!
4tablespoonfresh herbs of choice (coriander, chives, chervil)finely chopped
1tablespoontoasted sesame seedsoptional

Instructions
Place the green lentils in a pot of boiling water and cook for 15 minutes, then drain, season to taste and set aside.
In the meantime, place the salmon, coconut milk, soy sauce, lemon juice and ginger into the container of the ActiFry. Close the lid, and set the ActiFry to mode: 8 - world food, for 7 minutes.
Whilst the salmon cooks, cut the flesh of the avocados into cubes, and cut the cucumber into cubes.
Divide the lentils, avocado and cucumber equally among 6 bowls or shallow plates. Add the salmon, sprinkle with fresh herbs and optional sesame seeds. Season to taste and serve.
