Vegan Quinoa Summer Salad
This vibrant vegan Quinoa Summer Salad is loaded with veggies and healthy beans, high in protein and naturally gluten-free. The perfect meal to enjoy on sunny days!
- 3 cups cooked quinoa
- 1 large cucumber
- 10-12 cherry tomatoes
- 1 large red onion
- 1 can chickpeas
- 1/2 can black beans
- 1/2 can white beans
- juice of 1/2 lemon
- handful of fresh basil leaves chopped
- handful of fresh baby spinach leaves chopped
- 1 tbsp extra-virgin olive oil
- sea salt and black pepper to taste
Finely chop the cucumber, onion and tomatoes and place together with the cooked quinoa into a large salad bowl.
Place chickpeas, black beans and white beans in a colander, and rinse under fresh running water. Drain well and add them into the salad bowl.
Add in lemon juice, basil and spinach leaves, and season with olive oil, salt & pepper to taste. Mix all the ingredients until combined.
Serve immediately, or cover with cling film and refrigerate until ready to serve.
