Air Fryer Salmon in Coconut Milk with Lentils (Dairy-free)

Easy, quick and loaded with Asian-inspired flavour, this Air Fryer Salmon in Coconut Milk with Lentils is highly nutritious, ready in 20 minutes and is naturally dairy-free!

Ingredients

  • 300 g green lentils
  • 6 salmon fillets, cut into large cubes
  • 350 ml light coconut milk
  • 3 tablespoon soy sauce, or tamari sauce
  • 3 tablespoon lemon juice
  • 1 slice fresh ginger
  • 3 avocados
  • 1 cucumber
  • 4 tablespoon fresh herbs of choice (coriander, chives, chervil), finely chopped
  • 1 tablespoon toasted sesame seeds, optional
  • sea salt and black pepper, to taste

Instructions

  • Place the green lentils in a pot of boiling water and cook for 15 minutes, then drain, season to taste and set aside.
  • In the meantime, place the salmon, coconut milk, soy sauce, lemon juice and ginger into the container of the ActiFry. Close the lid, and set the ActiFry to mode: 8 - world food, for 7 minutes.
  • Whilst the salmon cooks, cut the flesh of the avocados into cubes, and cut the cucumber into cubes.
  • Divide the lentils, avocado and cucumber equally among 6 bowls or shallow plates. Add the salmon, sprinkle with fresh herbs and optional sesame seeds. Season to taste and serve.
