    Carrot Cake Smoothie {Vegan and Gluten-free}

    This easy Carrot Cake Smoothie tastes like a delicious slice of carrot cake, but it’s made with healthy, wholesome fresh ingredients. Plus, it’s naturally sweet, vegan and gluten-free!


    This is the perfect time to share something a little healthier than the usual cakes and treats, so say hello to this oh-so-good-for-you vegan and gluten-free Carrot Cake Smoothie.

    There's everything to love about this smoothie.

    It takes literally 5 mins to make, and it’s packed with good stuff - The mix of nuts, veggies and fruits provide a great source of antioxidants, vitamins and proteins.

    Moreover, it tastes just like dessert, but with none of the calories, sugar and everything else you could feel guilty about.

    Sweet, delicious carrots are mixed with the perfect blend of cinnamon and spices.

    Add in chopped banana and crunchy walnuts, and you have yourself a healthy slice of carrot cake in a glass!

    Before blending all the ingredients together, I like to juice the carrots in my juicer (so that I can use all the discarded pulp to make other recipes such as this Carrot Cake Banana Bread).

    However, if you don't have a juicer and don't mind a bit of a chunky texture, feel free to finely grate the carrots and pop them in the blender with the rest of the ingredients.

    This smoothie is very full-filling, a glass will keep food cravings away until lunch/dinner.

    It’s also an excellent pre/post workout energy-packed drink.

    I love to double up the amount of the ingredients and sip on it during the day between meals, it's really the easiest way to get through my 5 a day.

    Ingredients

    • 200 ml fresh homemade, or store-bought carrot juice
    • 1 banana
    • 1 tablespoon chopped walnuts
    • ¼ teaspoon ground cinnamon
    • a pinch of ground ginger
    • a pinch of nutmeg
    • 2 ice cubes, optional
    • 1 teaspoon maple syrup, optional

    Instructions

    • Place all the ingredients in a powerful blender and blend until smooth and creamy.
    • Pour into a glass and serve.

      Hey Natalie, good point 🙂 I like the delicate banana flavour here, as it gives a nice smooth texture and a kick of indulgence to the smoothie, but trust me, you can still pretty much taste the carrot and all the spices too 🙂

      I often make pure carrot smoothies to drink. They are easy to make, so healthy and tasty also!
      However, in this recipe you add a banana into the mix, I'm wondering whether the taste of carrot will be ligher when it is blended with banana's flavour?
