    Summertime calls for bright colors and bright flavors. Whilst fall season is just around the corner, I'm still quite enjoying all the summer flavors, especially this simple and easy pineapple salsa.

    I'm a huge fan of salsa in general, but pineapple salsa is definitely one of my favorites. Being Italian, I first thought it was kind of weird having a fruity side dish together with meat/fish. But after tasting fruit salsa, I realized I was missing A LOT.

    The tropical flavors of pineapple combine beautifully with tangy lime, red onion, red chilli, cilantro and tomatoes for a salsa that's great with anything grilled, whether you like chicken, steak, fish or even tofu. It's also delicious on its own just paired with tortilla chips or spooned over tacos.

    I like to serve this easy pineapple salsa directly in the pineapple, but if you're in a rush simply combine all the ingredients in a bowl. It only takes about 10 mins to put this delicious and simple pineapple salsa together.

    To make the pineapple bowl, using a sharp knife cut the pineapple in half lengthwise. Make a cut all around the edge and across the middle. With the help of a large spoon, then scoop out the pineapple chunks. Then all you have to do is mixing together all the ingredients in a large bowl and season to taste. Allow the salsa to rest in the fridge for at least 30 mins, so that all the flavors can combine nicely together.

    This easy pineapple salsa is delicious on everything from tacos, grilled meat & fish or simply together with some homemade tortilla chips. I had it with a tasty Tequila Lime Grilled Chicken (recipe coming out next) and it was incredible, probably the best dish I had this summer!

    Ingredients

    • 1 pineapple, peeled and cored
    • 2 fresh red chillies
    • a bunch of fresh cilantro
    • 1 small red onion
    • 3 roma tomatoes, deseeded
    • juice of 2 limes
    • sea salt and black pepper

    Instructions

    • Finely chop the pineapple, tomatoes and red onion into small cubes, trying to keep the same size if you can.
    • Finely mince the chilli and cilantro.
    • In a large bowl combine all the chopped ingredients, add the lime juice and season with sea salt and black pepper to taste.
    • Cover and refrigerate for at least 30 minutes/1 hour before serving.
    • Enjoy with grilled meat/fish or homemade tortilla chips.
