    Air Fryer Mint Lamb with Toasted Hazelnuts and Peas

    This air fryer mint lamb with toasted hazelnuts and peas is a quick and hearty midweek meal, featuring just 7 simple ingredients.


    On the table in just about 40 minutes, this air fryer mint lamb makes a wonderful option for a quick meal. Serve it with steamed rice or roasted potatoes for a hearty meal the whole family will love.

    This restaurant-worthy recipe is super comforting, but not too heavy, with a refreshing note and added crunch, to satisfy the most demanding palates.

    It's easy and quick enough to whip up for midweek meal, but also sophisticated enough to impress your guests at your next dinner party. A win-win if you ask me! 

    How To Make Mint Lamb In the Air Fryer

    Lamb and mint is a flavour match made in heaven. Add in some toasted hazelnut for a nutty flavour and peas for a sweet note, and you've got a successful meal that truly has it all.

    This dish is also naturally dairy-free and gluten-free, which is always an added bonus. It’s incredibly easy to make and requires just 7 ingredients:

    • shoulder of lamb
    • frozen peas
    • hazelnuts
    • hazelnut oil
    • white wine ( The abuse of alcohol is bad for your health. Please consume responsibly)
    • mint leaves
    • water

    The recipe itself couldn’t be easier. All you have to do is toast the hazelnuts in the ActiFry for 10 minutes.

    Then add seasoned lamb, frozen peas, mint leaves, white wine and water, and allow all the ingredients to cook for 25 minutes.

    In the meantime, you can get ready your favourite side dishes: pan-roasted potatoes, steamed rice, extra veggies or a colourful salad, they will all go well with it. 

    Lamb Cooking Tips

    The key to soft tender lamb is to use the right cut.

    Overly lean lamb just tastes tough and unpleasant. Using meat with some extra marbling makes a whole difference in terms of tenderness and flavour. I used the shoulder of lamb, and I can't recommend you enough to do the same.

    Most recipes call for leg of lamb or lamb fillet, which are both very lean and may result in tougher meat, so avoid using those cuts for this recipe.

    Also, I love the crunchy addition of hazelnuts, but if you're not a fan, try substituting with pecan nuts or walnuts, it will taste just as amazing!

    This is my second recipe creation for Tefal using their ActiFry Genius XL.

    I recently made this Air Fryer Salmon in Coconut Milk with Lentils, which has quickly become a family favourite, and I'm super excited to share this Air Fryer Mint Lamb recipe today!

    ActiFry Genius Spin Class

    I was challenged to take part in the ActiFry Genius spin class once more, and swap pedals for paddles to eat healthy.

    To help me choose a recipe for my second challenge, I spun the ‘Gear of goodness’, to help me decide which recipe to create based on the levels of ‘wow factor’ and difficulty.

    Air Fryer Mint Lamb with Toasted Hazelnuts and Peas

    Ingredients

    • 60 g hazelnuts
    • 600 g shoulder of lamb, cut into 3 cm x 1 cm strips
    • 1 tablespoon hazelnut oil
    • 2 tablespoon fresh mint leaves, chopped
    • 220 g frozen peas
    • 80 ml water
    • 100 ml white wine*
    • sea salt and freshly-cracked black pepper to taste

    Instructions

    • Place the hazelnuts in the ActiFry, close the lid and cook for on manual mode at 160C for 10 minutes. Remove the hazelnuts from the ActiFry, and set them aside.
    • In a large bowl, mix the lamb strips with the hazelnut oil, and season generously with sea salt and freshly cracked black pepper.
    • Place the mint leaves, followed by the seasoned lamb on the handle side of the ActiFry pan, and scatter the toasted hazelnuts on top.
    • Add peas on the other side of the pan, pour the wine and water over the ingredients, and close the lid.
    • Cook on mode 7- wok for 25 minutes.
    • Once ready, remove the ingredients from the pan and place on a serving dish. Sprinkle extra fresh mint leaves if you like and serve straight away with your favourite side dishes.

    Note: If you’re using unpeeled hazelnuts, once toasted, arrange them on a kitchen cloth and scrub them nicely for a couple of minutes. The peel will come off very easily!
