    Healthy, packed with fresh flavors and super quick to make, this swedish prawn sandwich is a total must-try for seafood lovers!

    As you may know already, I've been on holiday in Gothenburg a couple of weeks ago and it was the very first time I set foot in Sweden.

    I was very impressed by the many healthy food options you can find everywhere, from train stations and airports to sandwich shops and café's.

    Colorful salads, delicious raw/vegan treats, plenty of seafood and fresh fish, and LOADS of organic veggies and fruits.

    One of the most tasty foods I've tasted ( together with these crazy good kokosballs) was a fresh a simple open prawn sandwich.

    Räksmörgås (also called a räkmacka) is a very popular sandwich in Sweden, and you can find hundreds of these displayed on the counters of fishmongers or cafeteria's.

    It's impossible to leave the country without tasting at least one räksmörgås ( or dozen in my case).

    This open-faced sandwich it's made with very simple ingredients such as bread, eggs, lettuce, cucumber, lemon, dill, mayonnaise and of course cooked prawns/shrimps.

    It takes literally 5 mins to put together and it's a super tasty and full-filling sandwich perfect for a well-balanced breakfast/lunch/dinner.

    This energy-packed swedish prawn sandwich is loaded with healthy nutrients whilst being very healthy.

    You can even make it lighter if you use just a small dose of mayo (better if you make your own) or substitute it with yogurt.

    I love the fresh, vibrant flavors of all the ingredients together, so I usually opt for a "clean" version, where there's only a thin layer of mayo spread over the bread.

    As a base I used dark rye bread, but if you have a hard time hunting for it, common rye bread is a good substitute. Or you know, your favorite bread will do the job just as fine.

    Räksmörgås: Swedish Prawn Sandwich

    Ingredients

    • 2 boiled eggs
    • 2 slices rye bread, or any other good-quality bread
    • 4 tablespoon mayonnaise
    • 4-6 lettuce leaves
    • 300 g cooked prawns/shrimps, unveined and peeled
    • juice of 1 lemon + slices for garnish
    • 4 small sprigs of dill
    • 8 slices cucumber

    Instructions

    • Slice the eggs and cucumber into thin slices.
    • Spread 1 tablespoon of mayonnaise over each slice of bread.
    • Season the prawns with salt, pepper and lemon juice.
    • Arrange lettuce on top, followed by cucumber,eggs and seasoned prawns.
    • Top with extra mayonnaise, garnish with dill and lemon slices, and serve.

      This really looks and sounds delicious. You are right about the selection of healthy foods that are readily available in Sweden. As a tourist, you thankfully don't have to limit yourself to fast food.
