Difference between Sorbet, Sherbet and Ice Cream
Sorbet is a frozen dessert made with a base of water + fruit + sugar, and it's naturally gluten-free, dairy-free and vegan.
Sherbet is similar to sorbet, however, it does contain a small percentage of dairy to give it a richer texture and, therefore is not dairy-free or vegan.
Ice cream (and gelato), instead, has a base of milk/cream + sugar + fruit (or other flavorings), so it's not naturally vegan or dairy-free.
Of all the above, sorbet is definitely a lighter choice when it comes to frozen desserts, and has the highest percentage of fruit.
So, if you crave a fruit-loaded dessert, go for the sorbet!
The secret of perfect sorbet
The secret to reaching the perfect consistency when making sorbet comes down to the sugar-water ratio content.
Using too little sugar will make your sorbet very icy, using too much sugar will make it slushy and syrupy.
In the traditional Italian sorbet recipe, you make a water-sugar (in equal parts) syrup, that gives a rich unique texture to the sorbet.
To make the sugar syrup, simply place the water and sugar in a small pot and heat until the sugar has been dissolved. Allow to cool and proceed with the sorbet recipe.

What's my secret behind this super quick vegan mango sorbet?
Frozen mango chunks!
You can find chopped mango chunks pretty much in any large superstore these days, or you can chop a couple of mangos and freeze them in one layer the night before.
All you have to do is add frozen mango chunks in a powerful food processor.
Press the high-speed button and slowly pour in the prepared water & sugar syrup.
Keep mixing, until the chunks turn into a velvety luscious mango sorbet, about 3-4 minutes.
I like to eat my vegan mango sorbet straight away.
If you like a more dense consistency, transfer your sorbet into a large freezable container and let it freeze for a couple of hours.
Before serving, leave the sorbet at room temperature for a few minutes, then you can scoop it and serve it.
Make sorbet with any fruit!
You can use the recipe below to make a delicious vegan sorbet with pretty much any fruit you like! Some of my favorite fruit sorbets include:

Vegan Mango Sorbet ( Ready in 5 Min!)
Ingredients
- 600 g frozen mango chunks
- 1 tablespoon lemon juice
- 180 ml water
- 180 g sugar
Instructions
- Add water and sugar to a small pot, and heat on medium-low heat. Whisk gently until the sugar has been dissolved, about 5 minutes, then allow the syrup to cool down completely, and whisk in the lemon juice.
- Add mango chunks and ½ cup of the syrup in a powerful food processor.
- Blend on high speed until the mango chunks are completely smashed, pouring the remaining syrup whilst blending the mixture.
- Blend for about 3-4 minutes, until the sorbet reaches a creamy dense consistency.
- For soft-serve, scoop the sorbet directly from the food processor into small bowls and serve.
- For a much denser consistency, transfer the mango sorbet into a freezable container and freeze for 1-2 hours.
- Before serving, let the mango sorbet soften for 5 minutes, then scoop and serve.

I have canned mangos as the ones sold in the supermarkets here in Venice are not ripe. Will that do?

Hi Lidia, I've never tried this recipe using canned mangos, but I think it would work! Maybe reduce the sugar syrup amount, as I think canned mangoes are a bit sweeter than fresh ones.

The very best sorbet ever! I am not vegan or free anything, but my brother is. I used simple syrup and added the juice and zest of one lime. Turned out perfectly and so refreshing. Fortunately for me, my brother does not care for mangoes. More for me!

Thanks! If you use frozen mango, the sorbet comes together in a blink, otherwise with fresh mango, you'll need to wait until the sorbet is set (at least few hours in the freezer).
