    This vibrant vegan bean and quinoa salad is loaded with veggies and healthy beans, high in protein and naturally gluten-free. Perfect for sunny days!


    This is the perfect time to savor colourful summer salads in tons of different versions.

    Lately, I've been living off this Quinoa Summer Salad and as it has been such a success at home, it was definitely time to share it with you all.

    Ready in just 15 min, this quick quinoa salad makes a super easy, quick vegan meal, perfect to keep yourself light and full during the hot season.

    Loaded with nutritional value, this super food salad features healthy fulfilling quinoa, 3 different kinds of beans and loads of good refreshing veggies.

    Quinoa is super popular these days, and for a lot of good reasons: it's high on fiber, manganese (a powerful antioxidant), and is rich in protein.

    I've also added 3 different kinds of beans: chickpeas, black beans and white beans.

    All three are high fiber & protein and help keep away hunger, plus they have basically zero saturated fats.

    I personally buy canned beans most of the time and use canned tomatoes for all sorts of recipes.

    Both are super easy to find at the supermarket, handy to stock up in your pantry and store for several months, plus they have a very convenient price.

    Vegan Quinoa Summer Salad

    Ingredients

    • 3 cups cooked quinoa
    • 1 large cucumber
    • 10-12 cherry tomatoes
    • 1 large red onion
    • 1 can chickpeas
    • ½ can black beans
    • ½ can white beans
    • juice of ½ lemon
    • handful of fresh basil leaves, chopped
    • handful of fresh baby spinach leaves, chopped
    • 1 tablespoon extra-virgin olive oil
    • sea salt and black pepper to taste

    Instructions

    • Finely chop the cucumber, onion and tomatoes and place together with the cooked quinoa into a large salad bowl.
    • Place chickpeas, black beans and white beans in a colander, and rinse under fresh running water. Drain well and add them into the salad bowl.
    • Add in lemon juice, basil and spinach leaves, and season with olive oil, salt & pepper to taste. Mix all the ingredients until combined.
    • Serve immediately, or cover with cling film and refrigerate until ready to serve.
