I tried this recipe. My mom always used to make risotto with asparagus. I have never tried making it. She passed away recently and I wanted to try making this dish but wasn't sure how. I found this recipe on Pinterest and decided to try it. It turned out so delicious. Actually, better than my moms. I wasn't sure about the lemon as that is one ingredient I have never seen used in our north Italian cuisine but it gave it a beautiful flavor. Thank you. I am proud of myself as this dish tasted so good. Thank you for sharing.

    1. Hi Maria, thank you so much for sharing this with me. I'm truly honored that my recipe could help you recreate a dish that holds such special memories. Your mom’s risotto must have been amazing, and I’m sure she would be so proud of you for making it yourself. The lemon is a little twist, and I’m glad you enjoyed the flavor! Wishing you many more delicious risotto nights ahead.

  3. This risotto was really tasty. I followed the 1x recipe but it was still too much for me and my OH to finish. I’m currently looking for an Arancini recipe to use up the leftovers.
