  1. I enjoy light recipes, salads and fresh vegetables. If I have the craving for something more substantial, I'll make a Ceasar salad 🙂

  2. Halloumi fried in a little olive oil, served with a rocket salad and crusty bread with an oil & balsamic drizzle.

  4. I really like chargrilled veggies with new potatoes for a summer dish (and always like how you can get that nice properly chargrilled look with a pan like the Le Creuset one!)

  5. One tray bakes. My favourite is Chicken Thighs, red onions, red peppers, fennel, chorrizzo, 3 lemons (chopped up into quarters), new potatoes, mushrooms. So easy

  16. A beautiful fresh summer salad bursting with sweet little cherry tomatoes and what ever is green and in the fridge lol. I like using chopped fresh coriander in my salads for a bit little zing and a splash of salad vinaigrette. I'd pair this with a yummy piece of fresh cooked salmon cooked in parchment paper parcel style in the oven, nothing fancy just a drizzle of olive oil and a little cracked black pepper put on it. Divine!

  17. My favorite summer recipe is an Amish oil and vinegar based coleslaw. I absolutely do not like cream/mayo based coleslaw. I hate darn near anything with mayo in it...

  24. pizza! Mix some greek yogurt and self raising flour and make into a dough and bam pizza dough! I find it taste so much better this way

  25. I love Delia Smith's four cheese, spinach and pine nut lasagna - great for all the visiting vegetarians and as good cold as it is hot. Nom nom!

  30. Loving our very first holiday abroad last year, i've never tasted anything so delicious than a Paella. It's got to be my all time fav dish for the summer.

  32. So many to choose, favourite must be making our own sourdough base and inviting the family round for a Friday night pizza evening, cooked in our outdoor oven,. They love building their base, with seafood, meat, olives, veg, cheese toppings and dodging the heat as they drop in their pizza off the peel. Always a smile and a glass of red around an outdoor table. ????

  35. I love cajun chicken try tray, just chuck some chicken pieces, potatoes onion and peppers on a tray. Sprinkle with cajun seasoning and bake it's great with salad or as part of a bbq.

  37. Halloumi, peppers, mushroom, carrot and onion skewers. They are soooo tasty and look great too! I serve them with different sorts of rice.

  39. My favourite meal for summer is a Tamarind and honey glazed seared tuna steak served with a mango, red onion and avocado salad and crusty bread.

  40. I love cooking with halloumi cheese at the moment so probably some halloumi and roasted vegetable kebabs for the barbecue would be my perfect summer dish!! Followed by bananas baked in foil with honey and rum!! Lovely! ?

I tend to keep things quite simple in the summer so my favourite would probably be something like lightly-minted BBQ lamb chops with new potatoes still in their jackets, lots of fresh green salad and tomatoes from the garden, a corn-on-the-cob, some fresh garden peas, couple of slices of beetroot (or a baby beetroot or two in honey), small bread roll and a small handful of ready salted chipsticks. A light afters of slices of 2 or 3 different melons with some cherries & berries is the perfect dessert.

  43. My fave summer recipe is a chicken souvlaki with a Greek salad. Tatziki and pitta bread is a must! What s gorgeous prize.

  45. I love making moussaka and I serve it with a salad and garlic bread (hopefully outside) in the evening. A great crowd pleaser.

  47. Le Creuset kitchen-ware has been in my family for years and we have found the quality outstanding. We cook with it when we celebrate extended family get togethers.

  51. Loaded aubergines! You can top thick slices with anything, but I like to griddle them, then top with a mix of lentils, tomatoes, onions & cheese (halloumi works well) then pop them under a hot grill. It's a lovely light summer meal.

  55. We are lucky enough to live by the sea, and one of our favourite summer recipes is freshly caught mackerel done on the BBQ, cooked with just a bit of garlic, herbs, olive oil and a drizzle of lemon. Simple but delicious!

  57. We regularly have big family meals together and our favourite summer recipe is braised ribs. Doing it in the oven is great if we don't want to get the BBQ out (and clean it afterwards!):

    Makes 6 servings

    Ingredients

    5 pound bone-in beef short ribs, cut crosswise into 2" pieces
    Kosher salt and freshly ground black pepper
    3 tablespoons vegetable oil
    3 medium onions, chopped
    3 medium carrots, peeled, chopped
    2 celery stalks, chopped
    3 tablespoons all-purpose flour
    1 tablespoon tomato paste
    1 750-milliliter bottle dry red wine (preferably Cabernet Sauvignon)
    10 sprigs flat-leaf parsley
    8 sprigs thyme
    4 sprigs oregano
    2 sprigs rosemary
    2 fresh or dried bay leaves
    1 head of garlic, halved crosswise
    4 cups low-salt beef stock

    Preparation

    Preheat oven to 350°F. Season short ribs with salt and pepper. Heat oil in a large Dutch oven over medium-high heat. Working in 2 batches, brown short ribs on all sides, about 8 minutes per batch. Transfer short ribs to a plate. Pour off all but 3 tablespoons drippings from pot.
    Add onions, carrots, and celery to pot and cook over medium-high heat, stirring often, until onions are browned, about 5 minutes. Add flour and tomato paste; cook, stirring constantly, until well combined and deep red, 2-3 minutes. Stir in wine, then add short ribs with any accumulated juices. Bring to a boil; lower heat to medium and simmer until wine is reduced by half, about 25 minutes. Add all herbs to pot along with garlic. Stir in stock. Bring to a boil, cover, and transfer to oven.
    Cook until short ribs are tender, 2-2 1/2 hours. Transfer short ribs to a platter. Strain sauce from pot into a measuring cup. Spoon fat from surface of sauce and discard; season sauce to taste with salt and pepper. Serve in shallow bowls over mashed potatoes with sauce spooned over.

    We love Le Creuset items in our house as they're such good quality. We are redoing our kitchen this year and do not have these items so would love to win them. They're gorgeous colours too - fingers crossed!

  58. I love a good gammon egg and chips in the summer followed by my homemade white chocolate and strawberry cheesecake

  59. I love to cook halloumi on the bbq, with peppers and onions, after marinating them in spices and oil. Then serve up with a fresh salad, freshly baked bread and some balsamic vinegar. Delicious!

  60. Tomato risotto with Parma ham and Parmigiano-Reggiano. Easy to prepare and ready in under 60 minutes.

  61. Couscous salad with additional contents consisting of a veg, a protein and a dairy - delicious and balanced! Favourites include: chicken, feta and red onion; halloumi, sweetcorn and chickpea.

  62. I like to make spicy chilli burgers for the BBQ and serve with melted stilton. Not exactly a light summer meal but an amazing treat!

  64. My favourite is pasta alla noricina - creamy cheesy sausage pasta, what could be better? I add leeks to mine to get some of my 5 a day.

  68. Fresh salads and BBQ food are always welcome during summer. However; there's never a better time than summer to try ice cream recipes - cherry, mint choc chip, vanilla, coconut...

    ...The only problem is that I never seem to make enough!

  70. Fresh tuna steak baked in lemon and lime juice with ginger, nutmeg and freshly-ground black pepper. Serve with a green salad and crusty rustic bread, and chilled white wine. Bliss!

  71. Quiche; my sister's hens lay lots of eggs so this is a good way to use them up, and baking cakes.

  72. We enjoy a Raclette type meal. Tasty treats like small cooked potatoes in their jackets, bread, onions, peppers, mushrooms, ham, sausages and whatnot heat on the upper part of the grill while individual trays of cheese (traditionally Raclette cheese, but you can use many other types ) melt underneath. Such a relaxing meal!

  73. I made my own clay oven out of pots last year, been making tandoori chicken - it's lovely, so that with pittas, salad, coleslaw & yoghurt and mint sauce - 10/10!!!

  76. As many I do love a BBQ in the summer. Just not a massive fan of just eating meat. So instead I add large filled mushrooms, asperges, pineapple, marinated eggplant and vegetable skewers.... that with a nice couscous or kale salad! Even the kids love it 🙂
