Easy Baked Tomatoes
Baked tomatoes are a super quick and easy appetizer or side dish for any occasion! Make them in 10 minutes with just 5 ingredients!
Baked tomatoes are one of my favorite spring-weather recipes. A simple veggie side dish that's so quick and easy to make.
Just slice up a few tomatoes, cover them with seasoned breadcrumbs, and pop them in the oven. In no time at all these baked tomatoes are ready for eating.
They are juicy, stuffed with flavor, and require just 5 ingredients!
Growing up in Sicily, my mum used to serve these tomatoes along with lemon chicken skewers on a typical warm day.
They also make the perfect side dish to burgers and grilled salmon, and they're just as great on their own with a salad.
Honestly, they make a fantastic side dish or appetizer for any kind of meal or occasion!
INGREDIENTS
To make these oven roasted tomatoes you need a few simple ingredients, just like most Italian recipes!
- Tomatoes: I like to use medium-sized salad tomatoes, that are slightly ripe.
- Breadcrumbs: I like to make my own using old ciabatta bread blitzed in a mixer for a few seconds. You can also use panko breadcrumbs or aromatic Italian breadcrumbs (pangrattato).
- Fresh basil: You substitute it with fresh parsley if you like.
- Garlic: Adds a ton of flavor, but you can skip it if needed.
- Extra-virgin olive oil: Always use high-quality extra-virgin olive oil for the best flavor.
- Cheese: Totally optional, but feel free to add grated Parmesan cheese or grated mozzarella on top of your tomatoes, for an extra cheesy flavor.
How to Make Baked Tomatoes
Cooking tomatoes in the oven is super easy.
- Just cut each tomato in half horizontally and lay them out on a baking tray.
- In a bowl mix together breadcrumbs, basil, garlic, and extra-virgin olive oil.
- Next, add the seasoned breadcrumbs to the halved tomatoes. You can sprinkle some Parmesan cheese on mozzarella on top.
- Pop them in the oven and let them bake until softened and crispy on top. They only take about 10 minutes to bake in the oven!
You can never go wrong with ripe tomatoes, seasoned breadcrumbs, cheese, and fresh herbs.
Load them up and good, and you'll have a great side dish or appetizer in no time!

Easy Baked Tomatoes
Ingredients
- 4 tomatoes
- 150 g italian breadcrumbs or panko breadcrumbs
- 4 tablespoon fresh basil, chopped
- 1 garlic clove, finely minced
- 2 tablespoon extra-virgin olive oil
- 2 tablespoon Parmesan cheese or mozzarella, grated, optional
- salt and black pepper
Instructions
- Preheat oven to 375F/190C.
- Cut each tomato in half horizontally and lay them out on a baking tray.
- In a bowl mix together breadcrumb, basil, garlic, and extra-virgin olive oil.
- Next, add the seasoned breadcrumbs to the halved tomatoes. You can sprinkle some Parmesan cheese on mozzarella on top.
- Pop them in the oven and let them bake until softened and crispy on top. They only take about 10 minutes to bake.
- Serve warm or at room temperature with your favorite main or with a salad and toasted bread on the side.
